It is Friday. I am off to Charleston in a little while, which is a good thing. The breeze is always nice there, and my friend has this dog named Max. Max is the best dog I have ever met. I am going to walk old Max down by the ocean and ruminate on the wisdom of canines.

Oh, and if you get mugged in Charleston and end up in the hospital ask for Amit to do the anaesthesia and tell him that Doug sent you.

Oh my LORD!! You live in SC, my most favoritest state, and near Charleston, my most favoritest city, followed closely by Savannah.
I was born in the wrong place.
I am meant to be a VERY wealthy southern belle, but I was born in CA by mistake. God was apparently quite busy at the time and not paying attention.
I now live in a hick southern state as of a year and a half ago. I am now officially southern, but there are no belles here, only tatooed women with bad teeth. I am trying to avoid chewing tobacco and I don't think I can bring myself to shoot a deer for dinner... I mean supper.
I love eating at Jestine's in Charleston. The sweet tea there is the best EVER!!
I also found a GREAT hole in the wall restaurant in Propserity, SC outside of Columbia. It is cafeteria style good home cooking. It is called The Back Porch. They make a divine red velvet cake with cream cheese frosting. My parents were looking to buy a home there a few years ago, and we found that little gem.
As you can tell, I like to eat. If I didn't exercise, I'd have a humungous bohunkus. As it is now, my backside is more than wide enough!

Just in case you get a hankering for that apple pancake, here's the recipe. Sorry, there were no leftovers. :(
Recipe for Oven Apple Pancake
Heat oven to 400.
Melt ¼ cup of butter in a 13X9 pan for 5 minutes.
In a bowl, combine 1 cup flour, 2 cups milk, 3 eggs, and ½ tsp salt and beat until well mixed.
Pour melted butter from pan into mixture and beat.
Pour batter into hot pan and bake for 30 – 35 minutes until puffed and set in center and golden brown.
While pancake bakes, make the apple filling: I doubled the recipe below so I would have more than enough.
Over medium heat, melt 2 TB butter in skillet.
Combine the following in a bowl:
2 TB cornstarch
1 TB cold water
Add the following to the mixture in bowl:
1/3 cup firmly packed brown sugar
½ tsp cinnamon
½ tsp vanilla
Put mixture in skillet and stir until sugar dissolves.
Add 2 medium apples, cored and sliced about ½ “ thick, in skillet and cook, stirring constantly.
Spoon mixture over pancake and serve immediately.
Sprinkle with powdered sugar.

I am in Columbia. I also spend a good bit of time in Charleston and the upstate. And one more thing. Since you seem to enjoy food as much as I do, you *must* try Sweatman's BBQ in Holly Hill (near Santee, SC). It is the Mecca.
